In an effort to add consistency to my healthy lifestyle, I need to find more recipes that are both easy and yummy. I refuse to eat anything that’s healthy but doesn’t satisfy me. Or something that’s yummy, but takes way too long to make. That being said, here’s something I tried and will for sure make it again, which is why I’m sharing.
I found the lentil mix on Pinterest because I bought a bag of lentils and had no idea what to do with them. I just knew I wanted to eat some. The recipe included the lentil/sweet potato mix, I decided to add the brown rice and avocado, which made it a more hearty meal. It’s really easy and yummy. Here are the ingredients so you can decide if you’re interested, but head over to Eat, Live Run for the instructions.
- 1/2 cup green lentils
- 1/2 large carrot, peeled and small diced
- 1/4 cup small diced onion
- 1 clove garlic
- 1 stalk celery, small diced
- 1 bunch kale, chopped
- 1 bay leaf
- 2 sprigs fresh rosemary
- 1 serrano pepper
- 1/4 tsp sea salt
- 1 sweet potato, peeled and chopped
- 2 tsp cooking oil
- 2 cups vegetable or chicken stock
The recipe makes enough to have three bowls like the one above and use the rest for a delicious soup. I blended the remaining lentil mix with some coconut milk and it was an easy way to turn one meal into two!
Note: This is supposed to be a spicy dish, but I did not include the serrano pepper in mine.
